I may be overthinking this but is bravery just generally applied to all opposing players regardless of stats, or would a player with lower bravery be less likely to dive into a man mountain of a player (e.g. Toure, Dioup etc.) than a weaker shorter player?

Bravery is mainly about how committed the player is. Braver players will risk injuries in situations where lesser minded will shy away from. Carles Puyol is an example of a player with much bravery, a player who will go all in in every situation and lay the line for the team. A brave player will also need aggression and determination to go all in, in the right situations.

In terms of your question, a player with high bravery wouldn't give a f*** about how big the opponent is...
